Hello Jean-Jo and all,
When I inquired about this a year or so ago in relation to some World Bank work, at the time I was told that whether you are taxed on UN earnings depends on whether you earn them while in Canada or abroad. The tax exemption kicks in only if you live outside of Canada for a certain period of time - I think it is three months or more. Regardless I believe you have to report this income in your tax return. The Revenue Canada web site probably has this information, as does the International Tax Office.

Canada has not signed the Convention on the Privileges and Immunities of the Specialized Agencies, with the material result that Canada does not recognize consultants of FAO as 'officials' of FAO and any tax exemptions provided under the Convention do not apply to consultants from Canada. The taxation of consultants from Canada thus depends on Canadian tax legislation.
FAO cannot therefore issue any document indicating that Canadian Consultants contract income is tax free. However, we can issue a "To Whom It May Concern" certificate stating the periods worked as Consultant and the honoraria received during thus periods, if needed.
